Cooking With Yvie: Chili and Corn Muffins

It's been too long!

Here is our latest installment of Cooking With Yvie. Since the girls are fine and their usual selves, we wanted to get back to our little cooking show here. And since it's finally dipped down into the 70s and 60s in Southern California - yes, true fall weather for SoCal - we wanted to make something a little hearty, a little warm and definitely a lot tasty.

So what better hearty, warm and tasty dish than chili? This is our preferred chili recipe, and truth be told we only recently started using the meat the way Yvie does in the show. It seems to add some flavor but you can't go wrong using all ground beef. Also, Yvie doesn't really mention it at first but she also shows you how to make corn muffins to go with chili, so it's a perfect combination for a nice dinner... or three. This makes a lot of chili, but it freezes well.

The show is a little longer than normal but figured since we've been absent for a bit that you might enjoy the longer-than-usual footage anyway.

Hey Yvie.

I wish you had posted this yesterday. I've been using the same chili recipe for 17 years and just yesterday I went to All Recipes looking for something new. I chose a different recipe than the one you recommended and I have already purchased the ingredients to make that one. We were so desperate for a good chili recipe that my husband actually flagged down two total strangers in the bean isle of the grocery isle to inquire about their chili recipe. Like you, the strangers had some secret ingredients. The first being, a certain brand of chili seasoning available only at a local Indian grocery store. And the second, the seasoning called All Spice.
I plan to try your recipe in the future but I have some questions for you. What was the name of the pepper you were using? What did you call the meat that you used? I can't figure out what you are saying or what it is. Sorry for the long comment. Sometimes I get carried away.

Great job, Yvie and Kenna!!!

Now I have to ask...what kind of Mexican's wife am I to have never thought of using chorizo in my chili??? I am ashamed!!!

I've finished my shopping for this week, but NEXT week, I will have to make chili and I WILL be a good wifey and use half chorizo.

I feel like a fraud!!!

Glad you're back, Yvie! I missed your cooking show!

That chili looks awesome! I just replaced my old chili recipe with a new, no-bean recipe (that I created on the fly). I thought everyone really liked it, but my son told me he misses the beans. I'll have to give this one a try just for him!
