Savory Sundays: sauteed veggies

Welcome to Savory Sundays. I'll have three savory treats today, the last one of which has become a great dish for us here at the LB household. First up is something that would work well as a side dish, and the simplicity is what I enjoyed about it. I got this recipe from Everyday Food on PBS.

Here's what you'll need:

2 medium zucchini
2 yellow bell peppers
1 pint grape tomatoes
2 cloves garlic
Coarse salt and black pepper
Olive oil

I actually halved it (well, except for the tomatoes... oops)

Chop the zucchini and yellow bell:

Heat up some olive oil on a skillet. You want it nice and hot when you toss the veggies in the oil. I really liked the colors of the dish.

Saute the veggies for about 6-8 minutes. You don't want them too soggy and that's about as much time as you'll need for them to heat up properly.

Now, I probably could have used fewer tomatoes and would have been fine but still the dish was quite tasty. And the best part about it, you will get plenty of servings of vegetables from this dish alone.
