Cooking With Yvie: Oatmeal Raisin Cookies

Welcome to another episode of Cooking With Yvie.

Today, Yvie tackles the Oatmeal Raisin Cookie. She's not a fan of oatmeal (truth be told, none of us here are big fans of oatmeal) but we have some around to make the Granola Bars and cookies such as this one.

1 cup margarine or butter
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt (optional)
3 cups quick-cooking or old fashioned oats, uncooked)
1 cup raisins

Preheat oven to 350 degrees
Beat margarine and sugar until creamy; add eggs and vanilla, beat well.
Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and raisins, mix well.
Drop by rounded tablespoonfuls onto ungreased cookie sheet.
Bake 10-12 minutes, or until golden brown.
Cool 1 minute on cookie sheet; remove to wire rack
Makes 4 dozen

Great cookies! We are huge Oatmeal fans around here, My son could eat it every morning for breakfast. Never the instant kind though, yuck :)

Yup, pretty much the only reason I ever buy oatmeal is for cookies :) And those look yummy.

Chewy oatmeal cookies are the best! Another great episode, Yvie! I'm glad you posted the recipe below the video, too.
